A bunch of little latex errors were fixed like changing & to \&, putting spaces in after \item, and correcting the \labels in a few files

\label{Answer_Date}

The answer date is when the problem and answers are viewable to the
student after the due date. If the answer date is mistakenly set for
a time before the due date, the answer date defaults to the due date.
If the answer date is not set, then students will not be able to see
the problems after they are due.
